High above the city, on Level 55 of Marina Bay Sands Tower 1, sits Jin Ting Wan, a Cantonese restaurant that feels both classic and modern. Inspired by the grace of the dragonfly, the space is calm, elegant, and designed to make you feel special from the moment you step in.

Cantonese Flavours with a Fresh Touch

The menu at Jin Ting Wan celebrates the best of Yue cuisine, which is another name for Cantonese food. It’s built on tradition but has been reimagined with a little creativity for today’s diners. You’ll find everything from wild game to seasonal seafood, all prepared with great care.

Some highlights include:

  • Wild Caught Red Flag Grouper in Lobster Broth
  • Smoked Crispy Stuffed Chicken Wing with Wild Mushroom & Black Rice
  • Teochew-Style Dual-Flavoured Alaskan King Crab

Each plate looks beautiful, but the focus is still on flavour. Everything feels balanced, familiar, and exciting all at once.

A Space that Feels Regal yet Relaxed

Jin Ting Wan is designed by AvroKO, a world-famous design firm. The interiors draw inspiration from the Song Dynasty, with deep blue tones, touches of gold, and elegant dragonfly motifs. It feels refined but never intimidating.

From the dining room, you can take in sweeping views of Singapore’s skyline. If you prefer privacy, there are elegant dining suites and an exclusive Chef’s Table where you can watch the culinary team in action.

Meet Chef Albert Li

Running the kitchen is Executive Chef Albert Li, who has worked in some of China’s most respected Michelin-starred and Black Pearl-awarded restaurants. He’s known for his wok skills, detailed food sculptures, and ability to combine old-school techniques with new ideas.

Chef Li keeps the menu seasonal, so there’s always something new to discover. To complete the experience, tea sommelier Zhao Gang and wine sommelier Joe Yang create thoughtful pairings that bring out the best in every dish.
