Janice Wong: Exploring the Art of Dessert

As Singapore’s National Day approaches, it is a time to recognise individuals who have shaped the country’s identity across different fields. In the culinary world, Chef Janice Wong is known for her dedication to pastry, chocolate and confectionery.

Her story is also featured in the docuseries Chefs Uncut, which captures her creative journey and approach to edible art.

A Career Sparked by a Farm Trip

Janice Wong is a native Singaporean. Her entry into the world of culinary arts began after a farm trip to Melbourne, Australia. That experience changed her perspective and led her to explore the potential of food. Since then, she has focused on testing the limits of dessert making, chocolate work and pastry techniques.

She trained under several respected chefs, including Thomas Keller, Grant Achatz, Oriol Balaguer and Pierre Hermé.

Launching 2am:dessertbar and Pure Imagination

In 2007, Janice Wong opened her first dessert restaurant in Singapore, named 2am:dessertbar. It became a platform for her to showcase modern pastry techniques and new dessert formats.

In 2014, she launched Janice Wong Pure Imagination. This brand markets a wide range of confectionery products, including chocolate bon bons, cakes and ice cream. The concept behind the brand is to create a space where art meets design, and where customers are encouraged to create and explore. The company is headquartered in Singapore and currently operates three retail outlets locally.

Global Reach and Collaborations

Janice Wong has expanded her presence beyond Singapore. Her brand has been part of several international collaborations, including Janice Wong MGM in Macau, Paradise Group in Incheon, Korea, and KaDeWe in Berlin. Her work has also appeared in exhibitions, such as a solo showcase at Huis Ten Bosch in Nagasaki, where she displayed edible artworks. She also collaborated with the Art Gallery of Western Australia, where she presented her largest edible art installation to date.

Awards and Recognition

Janice Wong has received multiple awards throughout her career. She was named Asia’s Best Pastry Chef by Asia’s 50 Best Restaurants in both 2013 and 2014. She received the title of Pastry Chef of the Year at the World Gourmet Summit Awards in 2011, 2013 and 2015. In 2012, she was awarded Young Woman of the Year by Her World.

Contribution to Singapore Food Culture

Janice Wong has contributed to Singapore’s food landscape by combining technical skill with creativity. Her work in both restaurant and retail settings has made pastry and chocolate more visible in Singapore’s culinary conversation. Through her projects, she continues to explore the boundaries of taste, texture and design.
