Metiz 2.0: A New Chapter for Modern Filipino Dining

Metiz takes its name from the French word “mestizo”, which means mixed heritage. Opened in 2019 by chef Stephan Duhesme, who is half-French and half-Filipino, the restaurant celebrates its own mixed background through food. Located in Makati, Metiz became known for its creative approach to Filipino flavours and earned a spot at No.48 on Asia’s 50 Best Restaurants 2023.

Now, Metiz 2.0 opens a new chapter, giving diners a closer, more personal look at its food and story.

The Heart of Metiz

From the beginning, Metiz was never just about serving familiar dishes like adobo, sinigang, or kakanin. It was about exploring what Filipino food can be and how it makes us feel. Chef Duhesme uses techniques and ideas from his French background while staying true to Filipino ingredients and flavours.

The team believes that Filipino food does not need to be “elevated.” Its variety and richness already speak for themselves. The menu celebrates this diversity and focuses on expressing Filipino identity through food.

What’s New in Metiz 2.0

With this relaunch, Metiz moves toward a more intimate dining style. The new setup centres around a chef’s table experience, where guests sit closer to the kitchen and see the team in action.

The restaurant is now open from Tuesday to Saturday with limited seatings at 6:00 PM and 7:30 PM. While the full tasting menu has not been revealed, you can expect dishes that feature lesser-known local ingredients, combined with Chef Duhesme’s skill in fermentation and thoughtful flavour pairings.

A Community Effort

Metiz has always been about more than one restaurant. The team credits its success to a community of farmers, producers, suppliers, collaborators, and peers who help bring its vision to life.

In their words, Metiz “is not about just one place but an entire network of incredible people who show that our rich culinary heritage can stand proudly beside everyone else’s.” The team also gives a special mention to Toyo Eatery, which has been a source of inspiration from the very beginning.
