The culinary industry across Asia is in mourning following the sudden passing of celebrated chef and restaurateur Margarita Forés at the age of 65. The news was announced by her son, Amado Forés, in a heartfelt social media post:
“Dear Friends and Family, it is with a heavy heart that I share the sudden passing of my Mom, Margarita A. Forés. Our family is mourning this unexpected loss, and we kindly ask for your prayers during this time. We will be able to share more in due time.”
Born on 23 March 1959, in Manila, Margarita “Gaita” Forés discovered her passion for cooking after moving to New York City for college. Without formal culinary training, she instead absorbed techniques directly from master chefs across Italy, fostering a deep connection with Italian cuisine.
After returning to Manila in the mid-1980s, Forés started her catering business, Cibo Di M, which paved the way for her first restaurant, Cibo, in 1997. Her commitment to authentic, affordable Italian cuisine quickly distinguished her in a market dominated by American fast-food chains.
Forés continued to innovate with several successful restaurants, including Lusso, Grace Park, and Alta, each reflecting her unique blend of Italian culinary traditions with Filipino flavours. These establishments became cornerstones of the Philippines’ dining culture.
In 2016, Forés was named Asia’s Best Female Chef, a recognition of her role in elevating Filipino cuisine on the international stage. She also appeared on global platforms such as CNN’s Culinary Journeys, showcasing her signature dish “Batchoy Ramen.”
The granddaughter of J. Amado Araneta and Dr. Jose Y. Forés, Margarita grew up among Manila’s elite, a background that provided her with unique opportunities to influence the Philippine culinary scene.
Margarita Forés’ journey from Manila to Milan and back has indelibly shaped the landscape of Philippine cuisine, leaving a legacy that will inspire future generations of chefs. Her sudden departure is a profound loss to the culinary world, and she will be remembered for her passion, innovation, and enduring influence.
