In the heart of Bangkok’s Chinatown, Restaurant POTONG is a testament to Chef Pam’s extraordinary culinary journey. Born into a family of Chinese herbal medicine producers, Chef Pam defied expectations, pursuing her love for cooking at Cordon Bleu in Bangkok and later honing her skills in NYC.
Returning to Bangkok, Chef Pam, along with her husband Tor, transformed her family’s five-generation building into POTONG.
Guests are treated to a 20-course tasting menu, each dish inspired by Chef Pam’s memories, earning her the first Michelin Star for a female chef in Thailand in January 2023.
Newly crowned Asia’s Best Female Chef 2024, Chef Pam will receive her award at the Asia’s 50 Best Restaurants ceremony on Tuesday, March 26th, in Seoul. This accolade adds to the list of achievements for POTONG, which debuted on Asia’s 50 Best Restaurants at No.35 in 2023 and secured a spot on the extended list of The World’s 50 Best Restaurants the same year.
The success of POTONG can be attributed to Chef Pam’s skillful integration of her family’s stories into a thought-provoking tasting menu. She spotlights Thai-Chinese cuisine with creative spins on traditional recipes, earning acclaim for her innovative approach.
In addition to her culinary accolades, Chef Pam is set to feature in Chefs Uncut, an upcoming documentary series by CreatorsLab. The series will unveil the untold stories of six culinary maestros who have left a significant mark on the Asian food scene. Coming soon to Netflix this March, the documentary promises an intimate look into Chef Pam’s journey and contributions to the culinary world.
