From the historic city of Xi’an to the streets of London and now to Singapore, Murger Han has brought the rich flavours of northwest China to a global audience. Since its inception in 2014, Murger Han has been at the forefront of introducing Xi’an cuisine in the West, becoming London’s first authentic Xi’an-style restaurant. Following immense success in London with branches from Euston to Elephant & Castle, Murger Han now opens its doors in Singapore.
At the heart of Murger Han’s menu is the Murger (Roujiamo), often touted as the world’s oldest “sandwich.” This dish traces back over 2,000 years to the Qin Dynasty and remains a staple in Xi’an street food culture. It features tender, simmered meat tucked into crispy, fluffy bread, offering a contrast of textures.
Steamed rice noodles mixed with fresh vegetables, a dish with royal origins that impressed Emperor Qin Shi Huang.
These noodles are famed for their size and the dramatic sound they make when being slapped against the table, a technique perfected over centuries.

The menu includes a variety of murgers, from the crusty lean pork murger to the aromatic cumin chicken murger, each offering a taste of Xi’an’s street food scene.
