The food here really stands out thanks to the variety of grilling styles—genshiyaki, warayaki, robatayaki, and rogama. Each one brings something different to the table. The genshiyaki method, which involves slow cooking over wood ash, delivers a perfect mix of crispy on the outside and tender on the inside. Their Toro Iwashi Genshiyaki is a great example, with its rich and flavourful sardines that melt in your mouth.
For something more hands-on, the Toyama Dried Hotaru Ika is a fun option. You get to grill the squid at your table, and in just a minute or two over hot charcoal, the umami flavours really come to life.
The warayaki technique is one of the more impressive methods used. The Warayaki Salmon & Ikura Chirashi dish, for instance, is cooked over burning rice straw, which adds a smoky taste to the salmon while leaving the inside slightly raw. It’s served with a salad, chawanmushi, and miso soup, making it a complete and satisfying meal.
Beyond the grilled dishes, there are plenty of other options on the menu. The chirashi bowl, topped with twelve types of sashimi, is fresh and colourful, perfect if you’re in the mood for something lighter. If you’re feeling adventurous, the thin beancurd with natto and blue cheese offers a bold mix of flavours that you won’t forget.
Don’t miss out on the drinks either. Janice Chi, Singapore’s first female master sake sommelier and co-owner of the Ishinomaki Group, has carefully curated a wide range of shochus. With over 50 varieties available, there’s plenty to explore, and Chi is confident the list will continue to grow.
